We spotted this gem on a trip from Enid, OK to Wichita, KS. We rounded the roundabout and there it was. We were famished. We noticed the sign says they are open until 10 on a Friday night.
We step inside and are immediately escorted to a seat. The place is festively decorated, sort of like a Cancun or La Fiesta Mexicana. Chips and salsa are placed on the table, much like any other Mexican restaurant. We notice the smell of the cilantro first. I dipped a warm chip into the little bowl and took a bite of some of the freshest, delicious scratch salsa I gave ever had. Perfectly seasoned for maximum flavor, we devoured the entire container of chips. A first for us.
The menu was large, easy to read, sectioned according to meat or specialty, with plenty of pictures to illustrate. My eye fell on an unusual item. Pineapple fajitas. It is half a pineapple, filled with steak, chicken and shrimp, swimming in a tasty sauce harboring onions and thin slices of red peppers. A healthy wedge of pineapple floated atop this decadent concoction, supporting 4 wedges of avacado and a dollop of sour cream. It was heaven!
The next plate the waitress sat before me was loaded with beans, rice, sour cream, guacamole and pico. Sitting atop this was a tinfoil packet containing 3 hot tortillas. I took pics. I dug in.
Hubby stuck with a safe choice. Jalisco burrito. He enjoyed it. Just a huge, shredded chicken burrito, spicy but not too much, covering a majority of the plate, buried beneath a generous portion of lettuce, topped by a dollop of sour cream.
As always, the drink of choice for us is water. Sometimes you want the flavors to stand out!
Our waitress was attentive without being overbearing. Worth a good tip for her efforts.
We plan a return trip soon. There were a few other items we want to sink our teeth in. Go eat there and leave satisfied! -

We were traveling from Colorado to Texas and were actually looking for some BBQ. The restaurant we hoped to eat at was no longer even in business (PIG SHACK). It was getting late and this restaurant was right next door to where we were planning to eat. Being from Texas, we were a little hesitant about Mexican food in Kansas. However, everything that we had was delicious. We had an appetizer of Texas dip which was different meats in a delicious cheesy creamy sauce and a shrimp appetizer that was wonderful also. For our entrées we had an enchilada plate, I fajita plate, and a nacho plate. All of these were absolutely great. In addition to this, Thursdays they have $1.99 margaritas. Awesome!!Next road trip through Kansas we will definitely stop here.
